Description

Ingredients

  • 1 pound Chicken breasts (diced)
  • 2 tablespoons Olive oil (for marinating)
  • 3 cloves Garlic (minced)
  • 2 tablespoons Tomato paste
  • 1 tablespoon Honey
  • 1 teaspoon Chili flakes
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 each Cucumber (diced)
  • 1 cup Cherry tomatoes or red bell pepper (diced)
  • 2 tablespoons Lemon juice (for salad)
  • 1 tablespoon Olive oil (drizzled for salad)
  • Salt to taste
  • 1 cup Hummus
  • 1 tablespoon Olive oil (for drizzling on hummus)
  • 1 teaspoon Smoked paprika or chili powder
  • 2 tablespoons Fresh parsley (chopped for garnish)

Instructions

  1. Marinate the Chicken: In a large bowl, mix together olive oil, minced garlic, tomato paste, honey, chili flakes, lemon juice, salt, and pepper. Add the diced chicken, and toss until well coated. Cover and let it marinate in the fridge for at least 30 minutes.
  2. Preheat the Grill: If you’re using a grill, preheat it to medium-high. Ensure the grates are clean and lightly oiled. If using a grill pan, heat it over medium-high heat and drizzle a bit of oil.
  3. Grill the Chicken: Once your grill is hot, add the marinated chicken pieces in a single layer. Grill for about 6-8 minutes per side until cooked through.
  4. Prepare the Salad: Toss diced cucumber, cherry tomatoes, lemon juice, and olive oil in a bowl. Season with salt to taste and mix until well combined.
  5. Hummus Base: On a serving platter, scoop out portions of hummus as the base. Drizzle with olive oil and sprinkle with smoked paprika or chili powder.
  6. Assemble the Bowls: Place the grilled chicken on top of the hummus. Add generous portions of the cucumber salad and garnish with fresh parsley.

Notes

Serve warm, at room temperature, or chilled. Pair with pita chips or crusty bread. Consider adding cooked quinoa or brown rice for a hearty base.
