Ingredients

  • 1 cup fresh raspberries
  • 1 cup white chocolate chips
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a standard 12-cup muffin tin by greasing it or lining it with paper liners.
  3. Mix the flour, sugar, baking powder, and salt in a large mixing bowl.
  4. Combine the melted butter, eggs, milk, and vanilla extract in another bowl.
  5. Pour the wet ingredients into the dry ingredients and stir gently.
  6. Add in the raspberries and white chocolate chips, folding gently to combine.
  7. Fill each muffin cup about 2/3 full with batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the tin for about 5 minutes before transferring to a wire rack.

Notes

For extra indulgence, drizzle melted white chocolate on top before serving.
