Ingredients

- 16 oz Mild Italian Sausage (ground)
- 1 TBSP Butter
- 1/2 Yellow Onion (finely minced)
- 4 Garlic Cloves (minced)
- 1/2 Cup White Wine (or Chicken Stock)
- 1 Cup Pumpkin Puree (not pumpkin pie filling)
- 1 tsp Italian Seasoning
- 1 Cup Heavy Cream
- 4 Cups Kale (chopped, tough stems removed)
- 16 oz Fresh or Frozen Gnocchi (uncooked)
- 1/2 Cup Chicken Stock (low sodium)
- 1/2 Cup Fresh Grated Parmesan
- Salt and Black Pepper to taste
- 1/4 Cup Fresh Basil (thinly sliced)
Instructions
- Brown the sausage in a large skillet over medium heat for 5-7 minutes until browned.
- Sauté the minced onion and garlic with butter until translucent.
- Add the white wine (or chicken stock) and deglaze the skillet, cooking until reduced by half.
- Stir in the pumpkin puree and seasoning.
- Pour in the heavy cream and let simmer for 5-7 minutes until thickened.
- Fold in the chopped kale and chicken stock until kale wilts down.
- Cook the gnocchi and stir into the sauce until coated.
- Finish with fresh grated parmesan and basil on top before serving.
Notes
Serve with crusty bread or a simple arugula salad for a complete meal.
