Description

A flavorful and comforting dish combining savory Italian sausage and creamy pumpkin, perfect for autumn.


Ingredients

  • 16 oz Mild Italian Sausage (ground)
  • 1 TBSP Butter
  • 1/2 Yellow Onion (finely minced)
  • 4 Garlic Cloves (minced)
  • 1/2 Cup White Wine (or Chicken Stock)
  • 1 Cup Pumpkin Puree (not pumpkin pie filling)
  • 1 tsp Italian Seasoning
  • 1 Cup Heavy Cream
  • 4 Cups Kale (chopped, tough stems removed)
  • 16 oz Fresh or Frozen Gnocchi (uncooked)
  • 1/2 Cup Chicken Stock (low sodium)
  • 1/2 Cup Fresh Grated Parmesan
  • Salt and Black Pepper to taste
  • 1/4 Cup Fresh Basil (thinly sliced)

Instructions

  1. Brown the sausage in a large skillet over medium heat for 5-7 minutes until browned.
  2. Sauté the minced onion and garlic with butter until translucent.
  3. Add the white wine (or chicken stock) and deglaze the skillet, cooking until reduced by half.
  4. Stir in the pumpkin puree and seasoning.
  5. Pour in the heavy cream and let simmer for 5-7 minutes until thickened.
  6. Fold in the chopped kale and chicken stock until kale wilts down.
  7. Cook the gnocchi and stir into the sauce until coated.
  8. Finish with fresh grated parmesan and basil on top before serving.

Notes

Serve with crusty bread or a simple arugula salad for a complete meal.
