Instructions

  1. Prepare the ingredients: Rinse the baby potatoes and cut them in half. Place them in a large bowl.
  2. Season the chicken: In a large skillet over medium heat, drizzle in the olive oil. Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
  3. Sear the chicken: Place the seasoned chicken breasts in the hot skillet and sear each side for 3-4 minutes until golden brown.
  4. Layer ingredients in the crockpot: Arrange the halved potatoes at the bottom of the crockpot, then lay the seared chicken breasts on top.
  5. Create the flavorful sauce: In a small bowl, mix together the chicken broth, minced garlic, and red pepper flakes. Pour this over the chicken and potatoes.
  6. Add the Parmesan: Sprinkle the grated Parmesan cheese evenly over everything.
