- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning

- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil

Instructions
- Prepare the ingredients: Rinse the baby potatoes and cut them in half. Place them in a large bowl.
- Season the chicken: In a large skillet over medium heat, drizzle in the olive oil. Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
- Sear the chicken: Place the seasoned chicken breasts in the hot skillet and sear each side for 3-4 minutes until golden brown.
- Layer ingredients in the crockpot: Arrange the halved potatoes at the bottom of the crockpot, then lay the seared chicken breasts on top.
- Create the flavorful sauce: In a small bowl, mix together the chicken broth, minced garlic, and red pepper flakes. Pour this over the chicken and potatoes.
- Add the Parmesan: Sprinkle the grated Parmesan cheese evenly over everything.
- Slow cook: Cover the crockpot and set it on low for about 6-7 hours or high for 3-4 hours.
- Check the cook: Around the 6-hour mark, check if the chicken is fully cooked (internal temperature of 165°F / 75°C).
- Serve it up: Scoop out portions onto plates, drizzle sauce over, and garnish with parsley.
