Description

A vibrant and refreshing watermelon salsa perfect for summer gatherings, chips, or as a topping for grilled meats.


Ingredients

  • 4 cups diced watermelon
  • 1 cup diced cucumber
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh mint, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Wash all your fresh produce thoroughly.
  2. Cut the watermelon in half, then into quarters to make it easier to cube. Remove the rind, and dice the flesh into bite-sized pieces.
  3. Peel and dice the cucumber into small cubes.
  4. Chop the red onion finely.
  5. Rinse and chop the mint leaves.
  6. Squeeze the lime juice into your mixing bowl.
  7. Combine the diced watermelon, cucumber, red onion, and mint in a big mixing bowl.
  8. Add a pinch of salt and pepper, then taste and adjust.
  9. Chill in the fridge for about 20-30 minutes before serving.

Notes

Serve with tortilla chips, grilled meats, or as a topping for tacos. Customize with jalapeños, feta, or diced mango for variations.
