Ingredients

- 4 cups diced watermelon
- 1 cup diced cucumber
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh mint, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Wash all your fresh produce thoroughly.
- Cut the watermelon in half, then into quarters to make it easier to cube. Remove the rind, and dice the flesh into bite-sized pieces.
- Peel and dice the cucumber into small cubes.
- Chop the red onion finely.
- Rinse and chop the mint leaves.
- Squeeze the lime juice into your mixing bowl.
- Combine the diced watermelon, cucumber, red onion, and mint in a big mixing bowl.
- Add a pinch of salt and pepper, then taste and adjust.
- Chill in the fridge for about 20-30 minutes before serving.
Notes
Serve with tortilla chips, grilled meats, or as a topping for tacos. Customize with jalapeños, feta, or diced mango for variations.
