Instructions
- Mix the chia seeds, almond milk, vanilla extract, and sweetener in a bowl until no dry clumps remain.
- Let it set in the refrigerator for at least 2 hours or overnight.
- Prepare the raspberries by rinsing fresh ones or thawing frozen ones and mashing lightly.
- Combine the chia pudding and raspberries, gently folding them in.
- Garnish with fresh raspberries and mint leaves before serving.
