Ingredients

- 2 cups rotisserie chicken, shredded
- 1 cup tzatziki sauce
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, chopped
- 1 cup cherry tomatoes, halved
- 2 tablespoons fresh dill, chopped
- Salt and pepper to taste
- Lettuce leaves for serving
Instructions
- Start by shredding your rotisserie chicken into bite-sized pieces and set aside.
- In a medium bowl, combine the tzatziki sauce with diced cucumbers, cherry tomatoes, and bell peppers. Stir gently.
- Now fold in the shredded chicken and mix until well coated. Adjust consistency with extra yogurt or water if needed.
- Toss in the chopped red onion and dill. Season with salt and pepper to taste.
- Finally, take the crispy lettuce leaves and create a base on your serving platter. Spoon the chicken mixture over the leaves.
Notes
This salad can be made ahead of time and stored in the refrigerator for up to 2 days. Keep chicken mixture separate from lettuce until serving to maintain crunch.
