Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 cup tzatziki sauce
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste
  • Lettuce leaves for serving

Instructions

  1. Start by shredding your rotisserie chicken into bite-sized pieces and set aside.
  2. In a medium bowl, combine the tzatziki sauce with diced cucumbers, cherry tomatoes, and bell peppers. Stir gently.
  3. Now fold in the shredded chicken and mix until well coated. Adjust consistency with extra yogurt or water if needed.
  4. Toss in the chopped red onion and dill. Season with salt and pepper to taste.
  5. Finally, take the crispy lettuce leaves and create a base on your serving platter. Spoon the chicken mixture over the leaves.

Notes

This salad can be made ahead of time and stored in the refrigerator for up to 2 days. Keep chicken mixture separate from lettuce until serving to maintain crunch.
