- 1 cup Jasmine Rice
- 2 tbsp Butter
- 1/3 cup Yellow Onion (chopped)
- 2/3 cup Mini Portobello Mushroom (chopped)
- 2 Garlic Cloves (minced)
- 1 tsp Ground Turmeric
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
- 2 cups Chicken Broth
- 2 tbsp Cilantro (fresh chopped)
Instructions
- Rinse the Jasmine rice under cold water until the water runs clear.
- Sauté in a medium saucepan, melt the butter over medium heat and toss in the chopped onions. Cook for about 3-4 minutes until translucent, then add garlic and sauté for an additional 30 seconds.
- Combine chopped mushrooms and let them cook for about 5 minutes.
- Add ground turmeric, salt, and black pepper, stirring well to coat. Toss in the rinsed rice and continue stirring for 1-2 minutes.
- Pour in the chicken broth, bring to a gentle boil, then reduce to low and cover. Let simmer for 15-20 minutes.
- Fluff the rice after letting it sit, covered for 5 minutes, then stir in fresh cilantro.
Notes
Serve with grilled chicken, roasted vegetables, or curry. Add lemon juice for a zesty finish.
