A comforting and healthier twist on the classic meatloaf, made with ground turkey and packed with vegetables.
Ingredients

- 1 lb Ground Turkey
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 tbsp Olive Oil
- 1 cup Seasonal Vegetables (carrots, celery, bell peppers)
- 1 tbsp Fresh Herbs (thyme, parsley, or oregano)
- Salt & Black Pepper to taste
- 1/2 cup Broth or Cream (as needed)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Sauté the onions and garlic in olive oil for 3-4 minutes until translucent.
- Mix together the ground turkey, sautéed veggies, herbs, salt, and pepper in a large bowl.
- Add broth or cream gradually to achieve the desired consistency.
- Shape the mixture into a loaf in the greased pan.
- Bake for 50-60 minutes, until the internal temperature reaches 165°F (75°C).
- Rest for 10-15 minutes before slicing to retain moisture.
