  • 1 large egg yolk
  • 2 cups fresh rhubarb, chopped
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine flour and sugar in a large bowl.
  3. Add butter and mix until the mixture resembles coarse crumbs.
  4. Incorporate the egg yolk and mix until the dough comes together.
  5. Chill the dough in plastic wrap for at least 30 minutes.
  6. Prep the rhubarb by washing and chopping it, then sprinkle with sugar and let it sit for 15 minutes.
  7. Whisk together the eggs, remaining sugar, vanilla extract, and heavy cream until smooth.
  8. Roll out the chilled dough and transfer to a tart pan; trim the edges.
  9. Blind bake the crust for 15-20 minutes until lightly golden.
  10. Add the rhubarb to the crust, then pour the custard mixture over it.
  11. Bake for 30-35 minutes until the custard is set with a slight jiggle.
  12. Cool completely before slicing.
