- 1 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- Combine flour and sugar in a large bowl.
- Add butter and mix until the mixture resembles coarse crumbs.
- Incorporate the egg yolk and mix until the dough comes together.
- Chill the dough in plastic wrap for at least 30 minutes.
- Prep the rhubarb by washing and chopping it, then sprinkle with sugar and let it sit for 15 minutes.
- Whisk together the eggs, remaining sugar, vanilla extract, and heavy cream until smooth.
- Roll out the chilled dough and transfer to a tart pan; trim the edges.
- Blind bake the crust for 15-20 minutes until lightly golden.
- Add the rhubarb to the crust, then pour the custard mixture over it.
- Bake for 30-35 minutes until the custard is set with a slight jiggle.
- Cool completely before slicing.
