A delightful combination of sweet chili grilled chicken paired with creamy coconut-lime cauliflower rice, perfect for a weeknight dinner.

- 2 chicken breasts
- 1/4 cup sweet chili sauce
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1/2 head of cauliflower, grated
- 1 tablespoon coconut oil
- Juice of 1 lime
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Marinate the chicken by whisking together the sweet chili sauce, soy sauce, and garlic powder in a bowl. Coat the chicken and let it marinate in the refrigerator for at least 30 minutes.
- Prepare the grill or grill pan by preheating to medium-high heat and lightly greasing it with oil.
- Cook the chicken on the grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Brush with remaining marinade as it cooks.
- Grate the cauliflower and sauté it in a skillet with melted coconut oil over medium heat, seasoning with salt and pepper.
- Add lime juice to the sautéed cauliflower after about 4-5 minutes of cooking.
- Finish the chicken by letting it rest for about 5 minutes before slicing.
- Serve the coconut-lime cauliflower rice topped with sliced chicken and garnished with chopped cilantro.
