Description

A refreshing and uplifting dessert that combines a sweet cookie crust with a creamy, citrusy filling.


Ingredients

  • 17.5 oz Sugar Cookie Mix
  • 1/2 cup Softened Butter
  • 16 oz Cream Cheese
  • 1/2 cup Sugar
  • 1 Tbsp Flour
  • 3/4 cup Frozen Lemonade Concentrate
  • 1 tsp Vanilla
  • 3.4 oz Instant Lemon Pudding Mix
  • 1 Egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the sugar cookie mix and softened butter in a large mixing bowl until it forms a soft dough.
  3. Press the dough evenly into the bottom of a greased 9×13 inch baking dish and bake for 10-12 minutes.
  4. Beat the softened cream cheese in another bowl until smooth, then gradually add the sugar, flour, and instant lemon pudding mix.
  5. Stir in the frozen lemonade concentrate, vanilla, and egg until blended well.
  6. Pour the creamy lemon filling over the hot crust and bake for an additional 25-30 minutes.
  7. Let it cool completely before slicing.
  8. Cut into squares or rectangles and serve chilled, optionally topped with whipped cream and lemon zest.

Notes

For an extra touch, top each square with fresh berries, mint leaves, and a wedge of lemon. Can be made ahead of time and stored in the fridge.
