  • 2 cups shredded chicken
  • 2 celery stalks, chopped into ¼ inch pieces
  • 1 green onion, chopped thin
  • 56 large strawberries, diced
  • ⅓ cup chopped pecans
  • ¼ cup mayonnaise
  • 2 tablespoons Greek yogurt, plain
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon poppy seeds
  • ½ teaspoon pepper
  • Salt to taste

Instructions

  1. Shred the chicken using two forks.
  2. Chop your celery and green onion into uniform pieces.
  3. Dice the strawberries into similar sizes as the chicken.
  4. Combine the shredded chicken, chopped celery, green onion, diced strawberries, and chopped pecans in a mixing bowl.
  5. Make the dressing by whisking together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, poppy seeds, pepper, and a pinch of salt in a smaller bowl.
  6. Toss the dressing with the chicken mixture until evenly coated.
  7. Taste and adjust seasoning if necessary.
  8. Chill in the fridge for at least 30 minutes before serving.
