- 2 cups shredded chicken
- 2 celery stalks, chopped into ¼ inch pieces
- 1 green onion, chopped thin
- 5–6 large strawberries, diced
- ⅓ cup chopped pecans
- ¼ cup mayonnaise
- 2 tablespoons Greek yogurt, plain
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1 tablespoon poppy seeds
- ½ teaspoon pepper
- Salt to taste
Instructions
- Shred the chicken using two forks.
- Chop your celery and green onion into uniform pieces.
- Dice the strawberries into similar sizes as the chicken.
- Combine the shredded chicken, chopped celery, green onion, diced strawberries, and chopped pecans in a mixing bowl.
- Make the dressing by whisking together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, poppy seeds, pepper, and a pinch of salt in a smaller bowl.
- Toss the dressing with the chicken mixture until evenly coated.
- Taste and adjust seasoning if necessary.
- Chill in the fridge for at least 30 minutes before serving.
