  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
  2. Combine the flour, sugar, baking powder, and salt in a large mixing bowl.
  3. Whisk together the melted butter, egg, milk, and vanilla extract in a separate bowl.
  4. Mix the wet ingredients into the dry ingredients until just combined, then fold in the strawberries.
  5. Blend the cream cheese with powdered sugar until smooth.
  6. Scoop muffin batter halfway into each tin, add cream cheese filling, and top with more batter.
  7. Bake for 18-22 minutes until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack.
