Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
- Combine the flour, sugar, baking powder, and salt in a large mixing bowl.
- Whisk together the melted butter, egg, milk, and vanilla extract in a separate bowl.
- Mix the wet ingredients into the dry ingredients until just combined, then fold in the strawberries.
- Blend the cream cheese with powdered sugar until smooth.
- Scoop muffin batter halfway into each tin, add cream cheese filling, and top with more batter.
- Bake for 18-22 minutes until a toothpick comes out clean.
- Cool in the tin for 5 minutes before transferring to a wire rack.
