A delicious fusion of cinnamon rolls and strawberry cheesecake, these rolls are soft, fruity, and topped with a sweet glaze, perfect for breakfast or dessert.

Ingredients

Scale
  • 1 cup warm milk (about 110°F)
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter (melted)
  • 1 teaspoon salt
  • 2 large eggs
  • 4 cups all-purpose flour
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar (for filling)
  • 2 teaspoons ground cinnamon
  • 1 cup fresh strawberries (diced)
  • 8 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk (for glaze consistency)
  • 1 teaspoon vanilla extract (for glaze)
  • Optional: 1/4 cup strawberry jam for extra flavor

Instructions

  1. Activate the Yeast: In a large mixing bowl, combine the warm milk and yeast. Let this mixture sit for about 5 minutes until it becomes frothy.
  2. Mix the Dough: To your activated yeast mixture, add the sugar, melted butter, salt, and eggs. Whisk everything together until it’s well combined. Gradually add the flour, one cup at a time.
  3. Knead the Dough: Turn your dough onto a floured surface and knead it for about 5-7 minutes until smooth.
  4. Let it Rise: Place the dough in a greased bowl, cover with a damp towel, and let rise for 1-2 hours.
  5. Prepare the Filling: Beat softened cream cheese with powdered sugar and vanilla until smooth. Mix softened butter, granulated sugar, and cinnamon for the filling.
  6. Roll Out the Dough: Once risen, punch it down and roll it out into a rectangle, about 16×12 inches thick.
  7. Assemble the Rolls: Spread the cinnamon-sugar mixture, then the cream cheese mixture, and scatter diced strawberries. Roll the dough tightly.
  8. Slice and Arrange: Cut the rolled dough into 1-inch pieces and place in a greased baking dish.
  9. Second Rise: Cover the rolls with a towel and let them rise for about 30 minutes.
  10. Bake the Rolls: Preheat the oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
  11. Prepare the Glaze: Whisk together powdered sugar, milk, and vanilla until smooth.
  12. Glaze Your Rolls: Let the rolls cool for about 10 minutes, then drizzle the glaze over the top.
