Ingredients

  • 34 Eggs (fresh, for a fluffy texture)
  • 1 cup Fresh Spinach (chopped)
  • 1 cup Mushrooms (sliced, cremini or button recommended)
  • ½ cup Cheese (shredded, any melting cheese)
  • Salt & Pepper (to taste)
  • 12 tablespoons Olive Oil or Butter (for sautéing)

Instructions

  1. Prep your ingredients: Wash and chop the spinach and mushrooms.
  2. Whisk the eggs in a mixing bowl until well combined and slightly frothy.
  3. Sauté the sliced mushrooms in olive oil or butter over medium heat for about 3-4 minutes.
  4. Add the chopped spinach and let it wilt for 1-2 minutes.
  5. Pour the whisked eggs over the sautéed veggies, covering them evenly.
  6. Cook for 2-3 minutes, gently lifting the edges with a spatula.
  7. Add the cheese to one half of the omelet and fold the other half over it.
  8. Finish cooking for an additional minute to melt the cheese.
  9. Plate and serve with fresh herbs or a pat of butter on top.
