S’mores Cupcakes

Description

Transform the classic campfire treat into mouthwatering cupcakes with a rich chocolate flavor and fluffy meringue topping.


Ingredients

  • 1 1/4 cup (168g) graham cracker crumbs
  • 5 tbsp (70g) butter, melted
  • 5 tbsp (65g) sugar
  • 1 cup (130g) all-purpose flour
  • 1 cup (207g) sugar
  • 6 tbsp (43g) Hershey’s Special Dark Cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup (120ml) buttermilk
  • 1/2 cup (120ml) vegetable oil
  • 3/4 tsp vanilla
  • 1/2 cup (120ml) boiling water
  • 4 egg whites
  • 1 cup (207g) sugar (for meringue)
  • 1/2 tsp cream of tartar
  • 1 tsp vanilla extract (for meringue)
  • Chocolate sauce (for drizzling)
  • Graham cracker crumbs (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your cupcake pans with liners.
  2. Combine the graham cracker crumbs, melted butter, and sugar in a medium bowl.
  3. Press about a tablespoon of the graham mixture into the bottom of each cupcake liner.
  4. Whisk together the flour, sugar, cocoa powder, baking soda, and salt in a large bowl.
  5. Beat the egg, buttermilk, vegetable oil, and vanilla in another bowl, then combine with the dry ingredients.
  6. Add the boiling water to the batter and stir until combined.
  7. Fill the cupcake liners about 2/3 full with batter and bake for 18-20 minutes.
  8. Beat the egg whites and cream of tartar in a separate bowl until soft peaks form, then gradually add 1 cup sugar until stiff peaks form.
  9. Pipe the meringue onto cooled cupcakes and optionally toast lightly.
  10. Drizzle with chocolate sauce and sprinkle graham cracker crumbs on top.

Notes

For a vegan version, substitute egg with a flax egg and buttermilk with coconut yogurt.
