Description
A delightful and easy Small Batch Vanilla Peach Jam that captures the essence of summer with ripe peaches and a hint of vanilla.
Ingredients

- 4 cups Fresh Peaches, diced
- 2 cups Granulated Sugar
- 1 tablespoon Vanilla Extract
Instructions
- Prep the peaches by washing and slicing them in half. Remove pits and optionally peel.
- Chop the peaches into small chunks.
- Mix the diced peaches and sugar in a large pot and let sit for 15-20 minutes.
- Cook over medium heat, stirring occasionally for about 20 minutes until bubbling and thickened.
- Add vanilla extract and stir to combine, then remove from heat.
- Jar the hot jam into sterilized jars, leaving 1/4 inch of headspace.
Notes
This jam is best enjoyed over toast or mixed into yogurt. Can be stored in the fridge for 2-3 weeks.
