Description
A delightful Small Batch Vanilla Peach Jam that captures the essence of summer with sweet ripe peaches and a hint of vanilla.
Ingredients

- 4 cups Fresh Peaches, chopped
- 2 cups Granulated Sugar
- 1 tablespoon Vanilla Extract
Instructions
- Prep the peaches: Wash under cool water, slice in half, and remove pits. Optionally peel by blanching for 30 seconds.
- Chop the peaches into small chunks, aiming for about 4 cups.
- Mix the diced peaches and sugar in a large pot, letting it sit for 15-20 minutes.
- Cook over medium heat, stirring occasionally, until gently boiling (about 20 minutes).
- Vanilla it up: Once thickened, remove from heat and stir in vanilla extract.
- Jar the jam into sterilized jars, leaving 1/4 inch of headspace.
Notes
For longer storage, process jars in a water bath. Try mixing in spices or other fruits for variations.
