Description

A flavorful and easy dish that brings a touch of Italian cuisine to your dinner table with crispy Parmesan coating and tender chicken.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 yellow onion, chopped
  • 4 cloves fresh garlic, minced
  • 2 tablespoons olive oil
  • 2 cups seasonal vegetables (e.g., bell peppers, zucchini, asparagus)
  • 2 tablespoons fresh thyme and rosemary, chopped
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup broth or heavy cream
  • 1 cup grated Parmesan cheese

Instructions

  1. Prep your chicken: Pound chicken breasts to an even thickness for uniform cooking.
  2. Rub both sides of the chicken with olive oil, salt, and pepper.
  3. Combine grated Parmesan cheese, minced garlic, and chopped herbs in a bowl.
  4. Dip each chicken breast into the Parmesan mixture, ensuring a good coating.
  5. Heat olive oil in a pan over medium heat, and sauté the onion and seasonal veggies until tender.
  6. Add the coated chicken to the pan and cook for 5-7 minutes on each side until golden brown.
  7. Remove the chicken and let it rest; pour broth or cream into the pan, scraping up any bits.
  8. Thicken the sauce for a few minutes and then drizzle over sliced chicken.

Notes

Feel free to experiment with different herbs or add a spicy kick with red pepper flakes.
