  • 8 oz Cream Cheese (softened)
  • 1 cup Sour Cream
  • 1/2 cup Mayonnaise
  • 2 tbsp Lime Juice
  • 1/2 cup Cotija Cheese (crumbled)
  • 1 tsp Chili Powder
  • 1/4 cup Cilantro (chopped, optional)
  • Salt & Pepper (to taste)

Instructions

  1. Start by gathering all your ingredients and setting up your work area.
  2. Boil the corn if using fresh; otherwise, drain and rinse if using canned.
  3. Combine cream cheese and mayonnaise in a bowl until smooth.
  4. Add sour cream and blend until creamy.
  5. Mix in lime juice, chili powder, salt, and pepper.
  6. Fold in the corn until well coated.
  7. Crumble in Cotija cheese, adjusting seasoning if needed.
  8. Chill in the refrigerator for at least 30 minutes.
  9. Garnish with additional Cotija, chili powder, and cilantro before serving.
