- 8 oz Cream Cheese (softened)
- 1 cup Sour Cream
- 1/2 cup Mayonnaise
- 2 tbsp Lime Juice
- 1/2 cup Cotija Cheese (crumbled)
- 1 tsp Chili Powder
- 1/4 cup Cilantro (chopped, optional)
- Salt & Pepper (to taste)
Instructions
- Start by gathering all your ingredients and setting up your work area.
- Boil the corn if using fresh; otherwise, drain and rinse if using canned.
- Combine cream cheese and mayonnaise in a bowl until smooth.
- Add sour cream and blend until creamy.
- Mix in lime juice, chili powder, salt, and pepper.
- Fold in the corn until well coated.
- Crumble in Cotija cheese, adjusting seasoning if needed.
- Chill in the refrigerator for at least 30 minutes.
- Garnish with additional Cotija, chili powder, and cilantro before serving.
