Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan with cooking spray or butter, and line the bottom with parchment paper.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cream the butter and sugar in a large mixing bowl until light and fluffy—about 2-3 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Combine the wet and dry ingredients, mixing just until combined.
  6. Fold in your mixed fruits gently.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
