Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan with cooking spray or butter, and line the bottom with parchment paper.
- Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Cream the butter and sugar in a large mixing bowl until light and fluffy—about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Combine the wet and dry ingredients, mixing just until combined.
- Fold in your mixed fruits gently.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar if desired, slice, and serve!
