- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 cup buttermilk
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 2 cups fresh peaches, chopped
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×5-inch loaf pan with cooking spray or butter and dust it with flour.
- Mix dry ingredients: combine flour, baking powder, baking soda, salt, and cinnamon in a large bowl.
- Cream the softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, incorporating fully; then pour in vanilla extract.
- Combine wet and dry ingredients, alternating with buttermilk, and mix just until combined.
- Fold in chopped peaches gently.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
Serve warm with butter or whipped cream. Can also be enjoyed with vanilla ice cream.
