Ingredients
1 tbsp olive oil
1 lb spicy sausage (sliced or crumbled)
1 onion, diced
1 bell pepper, chopped
2 cloves garlic, minced
1 cup long-grain white rice
2 ½ cups chicken broth
1 tsp smoked paprika
½ tsp dried thyme
Salt & pepper to taste
Optional: chopped parsley or green onions for garnish
Instructions
Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned.
Add onion and bell pepper; sauté until softened, then stir in garlic.
Mix in rice, paprika, thyme, salt, and pepper. Toast for 1–2 minutes.
Pour in chicken broth, bring to a boil, then reduce heat. Cover and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.
