Crispy, tangy cucumber chips seasoned with salt and vinegar, perfect for summer snacking.
Ingredients

- 4 firm, fresh cucumbers
- 1–2 teaspoons kosher salt or sea salt
- 1/4 cup white vinegar, apple cider vinegar, or rice vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon paprika (optional)
- 1/2 teaspoon garlic powder (optional)
Instructions
- Prep the cucumbers by washing thoroughly and slicing thinly.
- Slice them with a knife or mandoline for even thickness.
- Salt the cucumber slices in a bowl and let them sit for 15-20 minutes.
- Rinse the cucumbers under cold water and drain well.
- Dress with vinegar and olive oil in a separate bowl, adding paprika and garlic powder if desired.
- Toss the dressing over the cucumber slices until well-coated.
- Chill in the fridge for at least 30 minutes for the best flavor.
- Serve in a bowl or on a platter with fresh herbs if desired.
Notes
