Description

Crispy, tangy cucumber chips seasoned with salt and vinegar, perfect for summer snacking.


Ingredients

  • 4 firm, fresh cucumbers
  • 12 teaspoons kosher salt or sea salt
  • 1/4 cup white vinegar, apple cider vinegar, or rice vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika (optional)
  • 1/2 teaspoon garlic powder (optional)

Instructions

  1. Prep the cucumbers by washing thoroughly and slicing thinly.
  2. Slice them with a knife or mandoline for even thickness.
  3. Salt the cucumber slices in a bowl and let them sit for 15-20 minutes.
  4. Rinse the cucumbers under cold water and drain well.
  5. Dress with vinegar and olive oil in a separate bowl, adding paprika and garlic powder if desired.
  6. Toss the dressing over the cucumber slices until well-coated.
  7. Chill in the fridge for at least 30 minutes for the best flavor.
  8. Serve in a bowl or on a platter with fresh herbs if desired.

Notes
