Instructions

  1. Prepare Your Rhubarb Syrup: In a saucepan, combine equal parts of diced rhubarb, sugar, and water (about 1 cup each). Bring it to a gentle simmer over medium heat. Stir occasionally until the sugar dissolves and the rhubarb breaks down, about 10-15 minutes. Strain the syrup through a fine mesh sieve, discarding the solids, and let it cool.
  2. Fill a glass with ice. Use clear, large ice cubes for a fancier look.
  3. Combine the gin, rhubarb syrup, and lime juice in a shaker. Shake vigorously for about 10-15 seconds until well mixed.
  4. Strain the gin mixture over the ice in your prepared glass.
  5. Pour in the tonic water gently and give it a stir to combine.
  6. Finish with fresh rhubarb stalks for garnish and enjoy your drink!

Notes

You can make the rhubarb syrup ahead of time and store it in the fridge for up to two weeks. Experiment with different flavors like berry or herbal variations!
