Delicious Rhubarb Cream Cheese Bars that are perfect for any celebration, combining tart rhubarb with a creamy filling.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1 teaspoon ground cinnamon
- 8 ounces cream cheese
- 1 teaspoon vanilla extract
- 1 large egg
- 2 cups rhubarb, chopped
- 1/2 cup brown sugar
- 1 cup rolled oats
- 1/2 cup melted butter
Instructions
- Preheat your oven to 350°F (175°C).
- Grab a 9×13-inch baking dish and line it with parchment paper.
- In a mixing bowl, combine the flour, granulated sugar, and melted unsalted butter. Mix until crumbly.
- Pour the mixture into your prepared baking dish and press firmly down to form an even layer.
- Pop the crust into the preheated oven and bake for 10 minutes.
- In another mixing bowl, soften the cream cheese and combine it with the egg, vanilla extract, and cinnamon.
- Beat until smooth and creamy, then mix in the chopped rhubarb and brown sugar.
- Once your crust has baked for 10 minutes, spread the cream cheese and rhubarb mixture evenly over the top.
- In the same bowl, combine the rolled oats, melted butter, and a sprinkle of cinnamon for the topping.
- Mix well, then sprinkle this oat mixture generously over the cream cheese filling.
- Return the pan to the oven and bake for an additional 25–30 minutes.
- Once done, let the bars cool in the pan for at least 30-45 minutes before slicing.
Notes
These bars can be prepared a day ahead of time and stored in the fridge. They can also be frozen in individual squares for up to 3 months.
