Description

Delicious Rhubarb Cream Cheese Bars that are perfect for any celebration, combining tart rhubarb with a creamy filling.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 teaspoon ground cinnamon
  • 8 ounces cream cheese
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 cups rhubarb, chopped
  • 1/2 cup brown sugar
  • 1 cup rolled oats
  • 1/2 cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grab a 9×13-inch baking dish and line it with parchment paper.
  3. In a mixing bowl, combine the flour, granulated sugar, and melted unsalted butter. Mix until crumbly.
  4. Pour the mixture into your prepared baking dish and press firmly down to form an even layer.
  5. Pop the crust into the preheated oven and bake for 10 minutes.
  6. In another mixing bowl, soften the cream cheese and combine it with the egg, vanilla extract, and cinnamon.
  7. Beat until smooth and creamy, then mix in the chopped rhubarb and brown sugar.
  8. Once your crust has baked for 10 minutes, spread the cream cheese and rhubarb mixture evenly over the top.
  9. In the same bowl, combine the rolled oats, melted butter, and a sprinkle of cinnamon for the topping.
  10. Mix well, then sprinkle this oat mixture generously over the cream cheese filling.
  11. Return the pan to the oven and bake for an additional 25–30 minutes.
  12. Once done, let the bars cool in the pan for at least 30-45 minutes before slicing.

Notes

These bars can be prepared a day ahead of time and stored in the fridge. They can also be frozen in individual squares for up to 3 months.
