Ingredients

  • 1/3 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon salt
  • 1/4 cup milk
  • 1/2 cup unsalted butter, softened
  • 4 large eggs
  • 1/2 cup raspberry jam
  • 1/4 cup water

Instructions

  1. Activate the yeast: In a small bowl, combine the warm water and active dry yeast. Let it sit for about 5-10 minutes until foamy.
  2. Mix the dry ingredients: In a large mixing bowl, whisk together the flour, sugar, and salt until well combined.
  3. Create the dough: Make a well in the center and add the softened butter and eggs. Pour in the activated yeast mixture and milk. Combine until it forms a shaggy dough.
  4. Knead the dough: Turn the dough out onto a floured surface. Knead for about 10 minutes until smooth and elastic.
  5. First rise: Place dough in a greased bowl, cover, and let it rise for 1 to 1.5 hours, or until doubled in size.
  6. Shape the loaf: Punch down the dough, roll into a rectangle, and spread raspberry jam over the dough.
  7. Roll it up: Starting from one edge, tightly roll the dough and pinch to seal.
  8. Braid time: Cut the roll in half and twist each half together, or leave it whole in a loaf pan.
  9. Second rise: Cover and let it rise for about 30-45 minutes until puffy.
  10. Preheat and bake: Preheat oven to 350°F (175°C). Brush with egg wash, bake for 25-30 minutes until golden brown.
  11. Cool down: Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
