Description

A luscious Raspberry Posset that’s refreshing and simple to make, perfect for impressing guests with its creamy texture and raspberry flavor.


Ingredients

Scale
  • 2 cups heavy whipping cream
  • ½ cup granulated sugar
  • ¼ teaspoon sea salt
  • 1 tablespoon lemon zest
  • 2 cups raspberries (fresh or frozen)
  • 2 tablespoons freshly squeezed lemon juice
  • 4 tablespoons whipped cream (for topping)
  • ¼ cup fresh raspberries (to serve)

Instructions

  1. Combine the heavy whipping cream, granulated sugar, and sea salt in a medium saucepan and heat over medium, stirring until the sugar dissolves.
  2. Zest the lemon using a microplane grater, then juice it after cutting it in half.
  3. Add the lemon zest and juice to the cream mixture and stir gently until well mixed.
  4. Blend the raspberries in a blender until smooth, then fold the raspberry puree into the cream mixture gently.
  5. Divide the mixture among serving cups, cover, and refrigerate for at least 4 hours or until set.
  6. Whip the cream with sugar until soft peaks form, then top each posset with whipped cream and garnish with fresh raspberries.

Notes

For a dairy-free version, substitute heavy cream with coconut cream. You can also mix in other berries or flavors to customize your posset.
