- 2 cups heavy whipping cream
- ½ cup granulated sugar
- ¼ teaspoon sea salt
- 1 tablespoon lemon zest
- 2 cups raspberries (fresh or frozen)
- 2 tablespoons freshly squeezed lemon juice
- 4 tablespoons whipped cream (for topping)
- ¼ cup fresh raspberries (to serve)
Instructions
- Combine the heavy whipping cream, granulated sugar, and sea salt in a medium saucepan and heat over medium, stirring until the sugar dissolves.
- Zest the lemon using a microplane grater, then juice it after cutting it in half.
- Add the lemon zest and juice to the cream mixture and stir gently until well mixed.
- Blend the raspberries in a blender until smooth, then fold the raspberry puree into the cream mixture gently.
- Divide the mixture among serving cups, cover, and refrigerate for at least 4 hours or until set.
- Whip the cream with sugar until soft peaks form, then top each posset with whipped cream and garnish with fresh raspberries.
Notes
For a dairy-free version, substitute heavy cream with coconut cream. You can also mix in other berries or flavors to customize your posset.
