A delightful and healthful breakfast treat that combines fresh raspberries and chia seeds for a creamy pudding.
Ingredients

- 1/2 cup fresh or frozen raspberries
- 3/4 cup almond milk or coconut milk
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1/4 cup chia seeds
Instructions
- Prepare the raspberries by rinsing fresh ones gently and patting them dry, or thaw frozen ones.
- Mash the berries in a medium bowl until desired chunkiness is achieved.
- Combine the mashed raspberries, almond or coconut milk, maple syrup, vanilla extract, and chia seeds in a mixing bowl or large mason jar.
- Stir everything together until well combined, or shake in a mason jar.
- Let the mixture chill in the fridge for at least 4 hours, or ideally overnight, to thicken.
- Stir again before serving and adjust consistency with more milk if needed.
Notes
For a variation, try adding in chopped nuts or coconut flakes. Keep leftovers in the fridge for up to 5 days.
