Instructions

- Beat the eggs and sugar in a large bowl until thick and pale—about 3-4 minutes.
- Add the pumpkin puree and vanilla extract, stirring until well incorporated.
- Combine the dry and wet ingredients, folding gently to avoid overmixing.
- Spread the batter into the prepared pan evenly.
- Bake for 12-15 minutes, or until a toothpick comes out clean.
- Cool the cake in the pan for about 5 minutes, then lift it onto a powdered sugar-dusted towel.
- Roll it up while still warm and let it cool seam side down.
- Make the cream cheese frosting by beating together cream cheese, butter, and powdered sugar until fluffy.
- Unroll the cake gently, spread the frosting, and then roll it back up without the towel.
- Dust with powdered sugar before slicing and serving.
