- 1/2 cup unsalted butter (for filling)
- 4 ounces cream cheese (full fat)
- 2–3 cups powdered sugar
- 1 teaspoon vanilla extract (for filling)
- 1/4 teaspoon salt (for filling)
- 1 tablespoon whipping cream
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Mix the dry ingredients: whisk flour, cinnamon, ground ginger, nutmeg, cloves, baking soda, and salt in a bowl.
- Cream the butters and sugars in a separate bowl until light and fluffy.
- Add pumpkin puree and egg yolk; mix until well blended.
- Combine the dry and wet mixtures, mixing on low until just combined.
- Fold in quick oats until evenly distributed.
- Scoop tablespoonfuls of dough onto prepared baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes until edges are golden.
- Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack.
- Make the cream filling by mixing softened butter and cream cheese until smooth, then gradually add powdered sugar, vanilla extract, salt, and adjust consistency with whipping cream if needed.
- Assemble the pies: Fill half the cookies with cream filling and top with remaining cookies.
Notes
These pies freeze well; wrap individual pies tightly and store in an airtight container. Thaw at room temperature or microwave briefly to enjoy.
