Ingredients

- 1 cup pumpkin puree
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Gather a large mixing bowl and a medium bowl.
- Mix the wet ingredients in the large bowl: pumpkin puree, sugar, and vegetable oil. Add eggs and whisk.
- Combine the dry ingredients in the medium bowl: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Fold the dry mixture into the wet mixture until just combined.
- Add the nuts if using, and gently mix.
- Prepare the muffin pan with liners or grease.
- Fill muffin cups about 2/3 full with batter.
- Bake for 18–20 minutes, or until a toothpick comes out clean.
- Cool for a few minutes in the pan, then transfer to a wire rack.
Notes
For a richer flavor, substitute white sugar with brown sugar. Enjoy warm with butter or honey.
