Ingredients

- 1 cup jasmine rice
- 1½ cups water
- 1 tablespoon unsalted butter
- 1 (8 ounce) can crushed pineapple in juice (don’t drain)
- ½ teaspoon Kosher salt
- 1 tablespoon granulated sugar
- 1½ tablespoons fresh lime juice
- 2 tablespoons green onion (chopped)
Instructions
- Rinse the rice under cold water until the water runs clear.
- Cook the rice with water and salt in a saucepan, boiling and then simmering for 15 minutes.
- Add the butter and pineapple once the rice is cooked.
- Season with sugar and lime juice, adjusting to taste.
- Garnish with chopped green onions, stir, and serve.
Notes
For a coconut twist, substitute half the water with coconut milk. Pair with grilled chicken or shrimp for a complete meal.
