Description

A delightful and tropical Pineapple Rice that combines sweet and savory flavors for a perfect side dish.


Ingredients

  • 1 cup jasmine rice
  • 1½ cups water
  • 1 tablespoon unsalted butter
  • 1 (8 ounce) can crushed pineapple in juice (don’t drain)
  • ½ teaspoon Kosher salt
  • 1 tablespoon granulated sugar
  • 1½ tablespoons fresh lime juice
  • 2 tablespoons green onion (chopped)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Cook the rice with water and salt in a saucepan, boiling and then simmering for 15 minutes.
  3. Add the butter and pineapple once the rice is cooked.
  4. Season with sugar and lime juice, adjusting to taste.
  5. Garnish with chopped green onions, stir, and serve.

Notes

For a coconut twist, substitute half the water with coconut milk. Pair with grilled chicken or shrimp for a complete meal.
