- 2/3 cup (140 g) granulated sugar
- 1/2 teaspoon salt
- 1 1/4 cups (280 g) cold unsalted butter, cut into small cubes
- 1/4 cup (50 g) brown sugar, preferably dark
- 5 cups pitted, peeled, and chopped peaches (about 7–8 peaches/2.5 pounds)
- 1/4 cup (35 g) all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt

- Set aside about 1 cup of the crumble mixture for topping. Press the remaining mixture into the bottom of a greased 9×13 inch baking dish.
- Mix the chopped peaches, flour, brown sugar, cinnamon, and salt in another bowl. Add the heavy cream and vanilla extract, stirring until well combined.
- Pour the peach mixture over the crust in the baking dish, then sprinkle the reserved crumble on top.
- Slide the dish into the oven and bake for about 40-45 minutes until golden brown and bubbly.
- Cool in the pan for at least 20-30 minutes before slicing.
