Ingredients

  • 5 cups fresh peaches, peeled and sliced
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • 1 pie crust
  • 1 additional pie crust (for lattice top, optional)

Instructions

  1. Prepare your peaches by peeling and slicing them. Blanch them in boiling water for easier peeling, then plunge into ice water.
  2. Place the sliced peaches in a large mixing bowl and add the sugar, flour, cinnamon, and lemon juice. Gently toss together and let sit for about 15-20 minutes.
  3. Preheat your oven to 425°F (220°C).
  4. Roll out your bottom crust to fit your pie pan, about 1/8 inch thick. Press it into the sides and trim excess dough.
  5. Pour the peach mixture into the pie crust, maximizing the peach goodness.
  6. Dot the filling with the tablespoon of butter, cut into small pieces.
  7. Create a lattice top if desired, or cover with a full crust and make slits for steam to escape.
  8. Crimp the edges and brush with egg wash. Bake for 45-50 minutes, until golden and bubbling.
  9. Cool the pie on a wire rack for at least 2 hours before serving.
