- 5 cups fresh peaches, peeled and sliced
- 1 cup sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon butter
- 1 pie crust
- 1 additional pie crust (for lattice top, optional)
Instructions
- Prepare your peaches by peeling and slicing them. Blanch them in boiling water for easier peeling, then plunge into ice water.
- Place the sliced peaches in a large mixing bowl and add the sugar, flour, cinnamon, and lemon juice. Gently toss together and let sit for about 15-20 minutes.
- Preheat your oven to 425°F (220°C).
- Roll out your bottom crust to fit your pie pan, about 1/8 inch thick. Press it into the sides and trim excess dough.
- Pour the peach mixture into the pie crust, maximizing the peach goodness.
- Dot the filling with the tablespoon of butter, cut into small pieces.
- Create a lattice top if desired, or cover with a full crust and make slits for steam to escape.
- Crimp the edges and brush with egg wash. Bake for 45-50 minutes, until golden and bubbling.
- Cool the pie on a wire rack for at least 2 hours before serving.

Serve with a scoop of vanilla ice cream or drizzle with caramel sauce for an enhanced dessert experience.
