- 1/2 teaspoon cinnamon

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix the wet ingredients: In a large mixing bowl, combine your mashed peaches, melted coconut oil, honey (or maple syrup), and vanilla extract. Stir until well combined.
- Combine the dry ingredients: In a separate bowl, whisk together rolled oats, almond flour (or whole wheat flour), baking powder, cinnamon, and salt.
- Join the forces: Gradually add your dry mixture to the wet ingredients, stirring until all ingredients are combined into a cohesive dough.
- Scoop it out: Using a cookie scoop or two spoons, drop cookie dough onto your lined baking sheet, leaving some space in between.
- Bake to perfection: Slide your baking sheet into the oven and bake for about 12-15 minutes, or until the edges are golden brown.
- Cool time: Once out of the oven, let them sit on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.
