- 1 cup Wild Rice
- 6 cups Chicken or Vegetable Broth
- 2 tablespoons Olive Oil
- 1 medium Onion, chopped
- 3 cloves Garlic, minced
- 1 cup Carrots, diced
- 1 cup Celery, diced
- Herbs: 2 teaspoons Fresh Thyme, 1/4 cup Fresh Parsley, chopped
- Salt and Black Pepper to taste
- 1 cup Cream (or non-dairy substitute)
Instructions
- Prepare your Wild Rice: Rinse 1 cup of wild rice under cold water, then set aside.
- Sauté your Vegetables: In a pot, heat 2 tablespoons of olive oil over medium heat. Add onion and garlic. Sauté until translucent, about 5 minutes.
- Add Seasonal Veggies: Stir in diced carrots and celery. Cook for another 5-7 minutes.
- Stir in Wild Rice: Add the rinsed wild rice and 6 cups of broth. Bring to a simmer, lower heat, cover, and cook for about 45 minutes.
- Add the Creaminess: Once rice is cooked, stir in 1 cup of cream or non-dairy substitute.
- Season to Taste: Add herbs, salt, and black pepper to your liking.
- Serve and Enjoy: Ladle the soup into bowls and garnish with fresh herbs or a drizzle of olive oil.
Notes
Serve with crusty bread or a light salad. The soup can be frozen for up to 3 months. For added protein, consider adding shredded chicken or chickpeas.
