Description

A heartwarming Chicken and Dumplings recipe that combines tender chicken, creamy broth, and fluffy dumplings for a comforting meal.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 cups seasonal vegetables (carrots, celery, peas)
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh parsley
  • Salt, to taste
  • Black pepper, to taste
  • 4 cups chicken broth or vegetable broth
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • Optional: heavy cream for finishing

Instructions

  1. Prep your ingredients: Dice the onion, mince the garlic, and chop your seasonal vegetables.
  2. Sauté the aromatics: Heat olive oil in a large pot over medium heat, add onion, and sauté until translucent. Add garlic and cook for an additional minute.
  3. Add the chicken: Cut chicken into bite-sized pieces, season with salt and pepper, and cook until browned, about 5-7 minutes.
  4. Incorporate vegetables: Stir in seasonal vegetables and herbs, and sauté for another 5 minutes.
  5. Pour in the broth: Add chicken broth and bring to a gentle simmer, letting it bubble for 15-20 minutes.
  6. Make the dumpling batter: Mix flour, baking powder, salt, and milk together to form a thick batter.
  7. Add dumplings to the stew: Drop spoonfuls of batter into simmering broth and cover to steam for 15-20 minutes.
  8. Finishing touches: Season with salt and pepper, and stir in heavy cream if desired.
  9. Serve it up: Ladle portions into bowls and garnish with fresh parsley.

Notes

For a lighter version, use vegetable broth instead of chicken broth. Store leftovers in an airtight container for up to three days.
