Ingredients

  • 2 lbs Chuck roast, cut into chunks
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 4 cups Seasonal vegetables (carrots, potatoes, parsnips)
  • 1 teaspoon Dried thyme or rosemary
  • Salt and black pepper to taste
  • 4 cups Beef broth or cream as needed

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sear the beef chunks until browned on all sides.
  3. Add the chopped onion and sauté until translucent, then stir in the garlic.
  4. Stir in the seasonal vegetables and cook for 5 minutes.
