Ingredients

- 2 lbs Chuck roast, cut into chunks
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2 tablespoons Olive oil
- 4 cups Seasonal vegetables (carrots, potatoes, parsnips)
- 1 teaspoon Dried thyme or rosemary
- Salt and black pepper to taste
- 4 cups Beef broth or cream as needed
Instructions
- Heat the olive oil in a large pot over medium heat.
- Sear the beef chunks until browned on all sides.
- Add the chopped onion and sauté until translucent, then stir in the garlic.
- Stir in the seasonal vegetables and cook for 5 minutes.
- Return the beef to the pot, add herbs, salt, and pepper, then pour in the broth.
- Bring to a gentle boil, then reduce heat and simmer for 1.5 to 2 hours.
- Taste and adjust seasoning before serving.
