- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups spinach
Instructions
- Heat the olive oil in a large pot over medium heat.
- Sauté the chopped onion until translucent, about 3-5 minutes.
- Add the diced carrots and celery, and sauté for about 5 minutes.
- Introduce the diced zucchini and bell pepper, cooking for another 3-5 minutes.
- Pour in the vegetable broth and add the can of diced tomatoes.
- Season with oregano, basil, salt, and pepper, then let it simmer for 15-20 minutes.
- Add the spinach five minutes before serving.
- Taste and adjust seasonings as needed.
- Serve the soup in bowls, garnishing with fresh herbs or croutons if desired.
