Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the chopped onion until translucent, about 3-5 minutes.
  3. Add the diced carrots and celery, and sauté for about 5 minutes.
  4. Introduce the diced zucchini and bell pepper, cooking for another 3-5 minutes.
  5. Pour in the vegetable broth and add the can of diced tomatoes.
  6. Season with oregano, basil, salt, and pepper, then let it simmer for 15-20 minutes.
  7. Add the spinach five minutes before serving.
  8. Taste and adjust seasonings as needed.
  9. Serve the soup in bowls, garnishing with fresh herbs or croutons if desired.
