A quick and creamy vegan pasta dish featuring pumpkin, perfect for busy weeknights.
Ingredients

- 8 oz (or 2/3 box) of pasta, cooked
- 3 tablespoons of oil
- 1/2 onion, chopped
- 3 garlic cloves, chopped
- 2 tablespoons of flour
- 1 1/2 cups pumpkin puree
- 1/4 cup cooking pasta water (reserved)
- 1/4 cup of stock or water
- 1 teaspoon salt
- Pepper, to taste
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1/2 teaspoon dried thyme
Instructions
- Cook the pasta according to package instructions, reserving 1/4 cup of pasta water before draining.
- Sauté the chopped onion in oil over medium heat for 3-4 minutes until soft.
- Add the chopped garlic and sauté for another minute.
- Sprinkle the flour over the onions and garlic, stirring constantly for about a minute.
- Pour in the pumpkin puree, reserved pasta water, stock, and seasonings, stirring to combine.
- Simmer for 3-4 minutes until the sauce thickens, adding more pasta water if needed.
- Toss in the cooked pasta and stir to coat with the sauce.
- Adjust seasonings as needed and serve warm.
Notes
Feel free to add greens or top with nuts for extra flavor and texture.
