Description

Delicious bell peppers stuffed with a flavorful mixture of ground beef, rice, corn, and spices, perfect for a comforting meal.


Ingredients

  • 4 large bell peppers (any color)
  • 1 cup cooked rice (brown, white, or cauliflower)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 pound lean ground beef (or ground turkey)
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prep your peppers by slicing the tops off and removing seeds and membranes.
  3. Cook the ground beef in a large skillet over medium heat until browned, about 5-7 minutes.
  4. Season the beef with cumin, chili powder, salt, and pepper. Add diced tomatoes and corn, and let it simmer for 5 minutes.
  5. Incorporate the cooked rice and mix thoroughly.
  6. Stuff each pepper with the beef-rice mixture, pressing down gently.
  7. Top with cheese if desired.
  8. Bake for 25-30 minutes, removing foil for the last 10 minutes to melt the cheese.
  9. Serve with fresh herbs and enjoy!

Notes

For added flavor, top with fresh cilantro or parsley before serving.
