Description

Ingredients

  • 2 cups old-fashioned oats
  • 1 ½ cups milk (or almond milk for dairy-free)
  • 1 large apple, diced
  • 2 eggs
  • ¼ cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients in a large bowl: oats, baking powder, cinnamon, and salt.
  3. Chop your apples into bite-size pieces.
  4. Whisk together the milk, eggs, maple syrup (or honey), and vanilla extract in another bowl.
  5. Combine the wet mixture with the dry ingredients and add the chopped apples and nuts, stirring until combined.
  6. Transfer to a lightly greased 9×9-inch baking dish and spread evenly.
  7. Bake for 30-35 minutes until golden on top and set in the center.
  8. Cool for 10 minutes before serving.

Notes

For serving, add Greek yogurt, extra maple syrup, or fresh fruit on top. You can also freeze leftovers for quick breakfasts later.
