- 2 cups old-fashioned oats
- 1 ½ cups milk (or almond milk for dairy-free)
- 1 large apple, diced
- 2 eggs
- ¼ cup maple syrup or honey
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp baking powder
- ¼ tsp salt
- ¼ cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the dry ingredients in a large bowl: oats, baking powder, cinnamon, and salt.
- Chop your apples into bite-size pieces.
- Whisk together the milk, eggs, maple syrup (or honey), and vanilla extract in another bowl.
- Combine the wet mixture with the dry ingredients and add the chopped apples and nuts, stirring until combined.
- Transfer to a lightly greased 9×9-inch baking dish and spread evenly.
- Bake for 30-35 minutes until golden on top and set in the center.
- Cool for 10 minutes before serving.
Notes
For serving, add Greek yogurt, extra maple syrup, or fresh fruit on top. You can also freeze leftovers for quick breakfasts later.
