  • 2 chicken breasts, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 cup chicken broth
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Parmesan cheese, for serving

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Once boiling, add the penne pasta and cook according to package instructions until al dente. Remember to stir occasionally to keep them from sticking together. Once cooked, reserve about half a cup of pasta water before draining.
  2. Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the sliced chicken breasts with salt and pepper. Add the chicken to the hot skillet in a single layer. Let it cook for about 5 minutes before flipping.
  3. Add Garlic: Once the chicken is cooked through and golden, add the minced garlic to the pan. Stir it around for about a minute until fragrant.
  4. Build the Sauce: Pour in the chicken broth and add the lemon juice and zest. Bring the mixture to a gentle simmer, letting all those flavors dance together for about 2-3 minutes.
  5. Combine and Toss: Once the sauce has come together, add the cooked penne and halved cherry tomatoes to the skillet. Toss everything together until the pasta is well-coated.
  6. Finish It Off: Remove the skillet from heat and stir in the chopped parsley. Serve right away, garnished with Parmesan cheese.

Notes

Adjust the seasoning to your taste. You can also swap chicken for turkey or chickpeas for a vegetarian option.
