- 4 chicken breasts, boneless and skinless
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 jalapeños, diced
- 3 peaches, diced
- 1/4 cup honey
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 1 tablespoon cornstarch
Instructions
- Prep the chicken: Start by patting your chicken breasts dry.
- Season & sear: In a large skillet, heat your olive oil over medium-high heat. Season the chicken breasts with salt and black pepper. Once the oil is shimmering, add the chicken and cook for 5-7 minutes on each side until cooked through (internal temperature of 165°F).
- Add jalapeños & peaches: In the same skillet, toss in the diced jalapeños and sauté for 1-2 minutes, then add your diced peaches and sauté for an additional 2-3 minutes.
- Make the sauce: In a bowl, combine honey, apple cider vinegar, and water, then pour into the skillet and let it simmer.
- Thickening the sauce: Mix cornstarch with a tablespoon of cold water until smooth and add this slurry to your skillet. Stir and let it bubble for another couple of minutes.
- Final touches: Taste the sauce and adjust the seasoning, adding more salt or sweetness as needed.
Notes
Store leftover Jalapeno Peach Chicken in an airtight container in the fridge for up to 3-4 days.
