  • Salt and black pepper to taste
  • 1 cup chicken broth (or a splash of cream)

Instructions

  1. Prep the chicken by trimming excess fat and patting it dry. Season with salt and pepper.
  2. Sauté the onions in olive oil over medium heat until translucent, about 3-4 minutes. Add minced garlic and stir for another 30 seconds.
  3. Cook the chicken in the skillet until browned and cooked through, about 5-7 minutes per side.
  4. Prepare the mushrooms in the same skillet, adding more oil if needed, and sauté until browned, about 5 minutes.
  5. Combine the cooked chicken with mushrooms, veggies, and broth. Let simmer for 10 minutes.
  6. Finish with fresh herbs and adjust seasoning if necessary.
  7. Plate the Mushroom Chicken warm and spoon sauce over the top to serve.
