Description

A hearty dish combining ground beef, black beans, and sweet corn, all topped with a fluffy cornbread crust.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 package (8.5 oz) cornbread mix
  • 1 cup shredded cheddar cheese
  • 1 egg
  • 1/3 cup milk
  • Spices (salt, pepper, chili powder) to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a large skillet over medium heat for about 5-7 minutes.
  3. Add the drained corn, black beans, and diced tomatoes with green chilies. Season to taste and simmer for 5 minutes.
  4. Prepare the cornbread topping by mixing the cornbread mix, egg, and milk until just combined.
  5. Combine the beef and bean mixture in a greased 9×13-inch baking dish and pour the cornbread batter over the top.
  6. Cheese the top with shredded cheddar cheese.
  7. Bake for about 25-30 minutes or until golden brown.
  8. Let it rest for 5 minutes before serving.

Notes

Leftovers can be frozen. Prepare ingredients ahead of time and assemble before baking.
