- 1 lb ground beef
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 package (8.5 oz) cornbread mix
- 1 cup shredded cheddar cheese
- 1 egg
- 1/3 cup milk
- Spices (salt, pepper, chili powder) to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Brown the ground beef in a large skillet over medium heat for about 5-7 minutes.
- Add the drained corn, black beans, and diced tomatoes with green chilies. Season to taste and simmer for 5 minutes.
- Prepare the cornbread topping by mixing the cornbread mix, egg, and milk until just combined.
- Combine the beef and bean mixture in a greased 9×13-inch baking dish and pour the cornbread batter over the top.
- Cheese the top with shredded cheddar cheese.
- Bake for about 25-30 minutes or until golden brown.
- Let it rest for 5 minutes before serving.
Notes
Leftovers can be frozen. Prepare ingredients ahead of time and assemble before baking.
