- 1 lb ground beef
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 package (8.5 oz) cornbread mix
- 1 cup shredded cheddar cheese
- 1 egg
- 1/3 cup milk
- Spices (salt, pepper, chili powder) to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Brown the ground beef in a large skillet over medium heat for 5-7 minutes.
- Add the corn, black beans, and diced tomatoes with chilies, and season to taste. Simmer for about 5 minutes.
- Prepare the cornbread topping by mixing the cornbread mix, egg, and milk in a bowl.
- Combine the beef mixture in a greased 9×13-inch dish and pour the cornbread batter on top.
- Cheese the casserole by sprinkling the cheddar cheese over the cornbread batter.
- Bake for 25-30 minutes until golden brown.
- Let it rest for about 5 minutes before serving.
