Description

A comforting one-pan bake featuring tender chicken, vibrant broccoli, and gooey cheese, perfect for busy weeknights.


Ingredients

  • 2 Boneless Chicken Breasts or Thighs
  • 1 Yellow Onion, diced
  • 2 cloves Garlic, minced
  • 2 tbsp Olive Oil
  • 2 cups Broccoli florets
  • 1 tsp Dried Thyme or Oregano
  • Salt and Black Pepper, to taste
  • 1 cup Broth or Cream
  • 12 cups Shredded Cheese (Cheddar, Mozzarella, or Blend)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the chicken in a skillet over medium heat with olive oil, seasoning with salt and pepper, for 5-7 minutes on each side.
  3. Sauté the onions until translucent, then add garlic and cook for another minute.
  4. Add broccoli and any additional seasonal veggies, sautéing for 3-5 minutes.
  5. Create the sauce by pouring in broth or cream, simmering until slightly thickened.
  6. Combine sliced chicken with the broccoli mixture in the skillet.
  7. Add shredded cheese, reserving some for topping.
  8. Transfer to a greased baking dish, top with reserved cheese.
  9. Bake for 25-30 minutes until cheese is bubbly and golden brown.
  10. Cool for 5-10 minutes before serving.

Notes

Feel free to mix in other veggies or use leftover roasted red peppers for additional flavor.
